Whoopie Pies


                     
         The Holidays are coming up fast, and when we think of holidays we think of treats! Whoopie pies are a great option because they look cute and taste delicious. 

What you need:

For cakes:2 cups all-purpose flour1/2 cup coca powder 1 1/4 teaspoons baking soda1 cup brown sugar 1 teaspoon salt1 cup well-shaken buttermilk1 teaspoon vanilla1 stick (1/2 cup) unsalted butter, softened1 large egg
For filling:1 stick unsalted butter, softened1 1/4 cups confectioners sugar 2 cups marshmallow cream 1 teaspoon vanilla

Directions for Cake:
To make this scrumptious treat start by preheating your oven to 350 degrees Fahrenheit. In a medium sized bowl whisk together flour, coca powder, baking powder, and salt until combined. In a separate bowl stir together vanilla and buttermilk. In a handheld, or stand up mixer beat together butter and brown sugar on medium-high, until fluffy, then add egg and beat until combined. Reduce speed to low, rotate between gradually adding the flour mixture and the vanilla mixture into the bowl, mix until smooth. Spoon the batter on to a  large baking sheet about 2 inches apart using a 1 tablespoon scoop. Bake for 12 minutes turning the baking sheet ever 6 minutes. After taking them out of the oven let them cool completely before filling them.


Filling:
Beat butter, confectioners sugar, marshmallow, and vanilla in a bowl with a stand up or hand held mixer on  medium speed until smooth and creamy, for about 3 minutes.

Assemble:
Dollop a tablespoon of filling on the flat sides of half of cakes and top with the remaining cakes.
